Watermelon Mochi
It's been a few weeks since Bill started on the backyard drainage. He's back at it again today, though he's got a bad sore throat and not feeling so hot. He's asked me to keep checking on him to make sure he hasn't keeled over.
Meanwhile, I've been playing some more with the Instant Pot. I've made BBQ ribs, carnitas, braised beef short ribs, and mashed potatoes, with pretty good results. Yesterday, I made watermelon jell-o mochi! Mochi in itself to me always seemed an inconceivable task to make, but this semi-cheat way is super easy in the Instant Pot. They turned out very yummy; not as sweet as I'd thought, more like a mild squishy gummy bear.
A couple drawbacks: Safeway didn't carry watermelon flavor gelatin, so I ordered from Amazon. The best deal was a 6 pack, so I'll be making many more batches. And unfortunately, Bill isn't a mochi fan, so I get to have these to myself. Not so bad for me, but bad for my diet.
