Instant Pot
A friend from high school wrote an article for Instant Pot and posted the link on Facebook. She convinced me it will be a cooking tool staple, so I picked one up yesterday at Kohls. There's several websites and food bloggers swearing by it, some dedicated just for recipes from chili to cheesecake.
After researching the reviews, I decided on the Duo60 6 quart model. I did not get the amazing Amazon Black Friday deal everyone else got, but used my expiring $5 Kohls cash with 20% Friends&Family coupon code to their $99 sale price =$64 + tax, plus Kohls gave me another $10 Kohls cash (almost a bad thing).
We had a pressure cooker growing up. I have memories of the thing hissing away and my mom's fall off the bone Hungarian chicken, dark red from the paprika. We didn't use sour cream and have it with rice instead of flat noodles, but I liked it just fine. These newer pressure cookers are much more fancy than Mom's. I'll get the hang of it before I attempt her Hungarian chicken. I have a cookbook due to arrive tomorrow, since I'm planning to get good use out of it. Tonight, for the Instant Pot initiation, we're making carnitas using a recipe from the "33+ Easy Instant Pot Recipes" from Pressure Cook website.
The recipe is pretty simple: throw the meat and spices in the pot to marinate, add liquid, pressure cook for 30 min, then put the meat on a tray in the broiler to sear. Tah-dah! I can see how this way of cooking is so popular.
