Sesame Coconut Cookies
I picked up a bag of Trader Joe's organic coconut chips to sprinkle on our granola, but decided to look for recipes to use them in. Found this recipe for sesame coconut cookies from Food 52. They remind me of the almond cookies we used to get from Chinatown. They came out so awesome, my coworkers could not stop eating them. Instead of grated coconut, I chopped up the coconut chips up a bit, then I sprinkled them on top and patted them so they would stick. Don't worry if some fall off when you're transferring them. I found the larger sized container of toasted sesame seeds at the Asian market that worked out cheaper than the regular market.
I bake these in a toaster oven, so had to do multiple batches.
